Mexico's Sustainable Agave Harvest Jan 2020
Hot lava rocks are heated by oak for 12 hours prior to the fresh agave being placed on top and covered for several days in the agave roasting pit. This massive roasting pit is located at the Vinata (distillery) of Don Mateo De La Sierra. Mezcal production in the highlands of Michoacan, Mexico.
